If using extra controllers is a bit of a challenge to your playing abilities, then simply overdub your MIDI CC in separate passes. A proper sensitivity curve, from your chosen controller method, set up to your specific playing response is also a very key step that is commonly missed. Realistic vibrato during the performance is also a must. Even better would be to use a breath controller assigned to the dynamic cross fading.
